One red-and-white Allsup's sign on a tall pole, a mile of soft teal sky, and nothing else — because out there, nothing else is the whole point. If you've driven eastern New Mexico or West Texas, you know exactly what this sign means: you made it to the next town, and there's a deep-fried burrito waiting.
The burrito has a birthday. On September 7, 1974, a man named Bob Pitcock working the Clovis store dropped a baked bean-and-beef burrito into the doughnut fryer to see what would happen. The next wave of customers bought every one he made. Lonnie Allsup put a vent hood over that fryer, and the chain has been turning out something like twenty-two million of them a year ever since.
The country that sign stands in holds more than it lets on. Santa Fe is where the Manhattan Project kept its front door — a small office at 109 East Palace Avenue where Dorothy McKibbin handed out passes to everyone headed up to Los Alamos, sixty-five people on a busy day, not one of them allowed to say where they were going. South of there, Trinity lit up the basin in July of 1945, and White Sands still runs white and blank past Alamogordo. There's an Allsup's in most of those towns now. The desert got the bomb in '45, Allsup's in '56, and the fried burrito in '74 — and two of the three are still open late.
